Instructions:
1. Prepare the Ingredients:
Soak the chia seeds in 1/4 cup water for about 10-15 minutes until they form a gel.
Cook the quinoa (1 part quinoa to 2 parts water) and let it cool.
2. Make the Patty Mixture:
In a food processor, combine the soaked beans, cooked quinoa, chia seed gel, and wheat bran. Blend until the mixture is mostly smooth but still has some texture.
Add salt, pepper, and any other spices you enjoy.
3. Adjust Texture with Wheat Bran:
If the mixture is too wet, add more wheat bran to reach a consistency that holds together well.
4. Form and Cook the Patties:
Shape the mixture into patties.
Air Fryer: Preheat to 375°F (190°C) and cook for about 10-12 minutes, flipping halfway.
Pan-Frying: Heat a bit of oil in a skillet over medium heat, cooking each patty for 4-5 minutes per side until golden.
Baking: Preheat the oven to 400°F (200°C) and bake for 20-25 minutes, flipping halfway.
5. Prepare the Banana and Avocado:
In a bowl, mash the banana and avocado together until smooth. Add a sprinkle of salt to the avocado if you like, or keep it sweet with just the banana.

Serving:
Place the warm patties in a bowl, and top with the mashed banana and avocado mixture.
Optionally, sprinkle nuts, seeds, or a little honey or maple syrup on top.

I ended up baking it in a pan and enjoyed scraping the dry/ burned edges
And put some fruit on top and cut up pitted dates.
